The St. Matthias Church in Jork has a rich history of organ building dating back to at least the 16th century. The current organ's case, crafted by the renowned organ builder Arp Schnitger in 1709, is one of the most significant historical elements still in place. Originally, the organ had 34 registers across three manuals and a pedal, with Schnitger’s apprentice, Nicolaus Stöver, playing a crucial role in its construction. Over the centuries, the organ underwent several modifications and restorations, including a major transformation in 1914 when the firm Faber and Greve replaced the original instrument with a pneumatic organ, keeping only the historic facade.

In 1980-1982, the organ-building firm Alfred Führer from Wilhelmshaven constructed a new instrument within Schnitger’s original case, using the surviving historical prospect pipes. This organ, designed to be in line with Schnitger’s style, features 22 registers. Subsequent restorations, including a significant overhaul by Harm Dieder Kirschner in 2009-2010, focused on enhancing the organ's sound quality, closely following the historical design of the original pipes. The restoration work in 2016 further improved the instrument's functionality and historical authenticity, making it a centerpiece of the church’s musical heritage.
